Week 19 Menu

Hello everyone! Here's my menu for the week. Um, so I think I actually made two items from last week's menu...I'm making progress! We'll see how this week goes...tomorrow marks the end of the first trimester. HOPEFULLY I'll be like normal people and stop being sick, but since my "morning" sickness is anything but normal, not holding my breath. Until "normal" sets in, I can keep on planning and hoping! Please share your menus - we all need your ideas!

MONDAY:
- Hawaiian pizza (using Trader Joe's 99 cent crust)
- Salad

TUESDAY:
- Cuban Mojito simmer sauce (TJs) with chicken
- Black beans
- Rice


WEDNESDAY:
- Leftovers

THURSDAY:
- Trader Joe's Chinese night (mandarin orange chicken, veggie stir fry, chicken shu mai)

FRIDAY:
- Eat out

SATURDAY:
- Roasted Chicken ($5 at Costco!)
- Mashed Potatoes
- Veggie

SUNDAY:
- Butternut Squash Soup
- Rolls

    Wednesday- Spinach & Cheese Tortellini Salad or Baked Broccoli & Cheddar Potatoes

    Thursday- Bolognese Pie

  6. Mangoes with sticky rice (modified from 'Thai the essence of Asian cooking' cookbook

    2/3 c glutinous rice (or basmati or jasmine if you don't have it)
    1 can coconut milk
    3 T sugar
    pinch of salt
    2 ripe mangoes, peeled and sliced

    rinse the rice and soak for a few hrs or overnight in cold water. Drain it and cook according to package directions or steam it about 20 min or until tender.

    Pour milk, sugar and salt in a pan and heat until sugar has dissolved. Stirring constantly, bring to a boil. Remove from heat and cool. (I can never wait to do this, but it is technically better this way)

    Put the rice in a bowl and pour liquid over the rice. Let sit for 15 min or so.

    Spoon rice onto plates and layer mango over top. For an additional treat scoop vanilla bean ice cream on top of the mango.

    Monday: Jane's Yum French Toast with fruit

    Tuesday: Baja Fresh style burritos

    Wednesday: Chicken Salad sandwiches with watermellon

    Thursday: Spagetti and garlic bread sticks

    Friday: Mango chicken with grilled zuchini
