Week 71 Menu

Sorry, no menu again this week...finishing up the trip in Utah then hitting the road. And when we get home, my mom is in town - yea! Even though I don't have a menu, I DO have a picture of the yummy Creamy Chicken Enchiladas I made the other week. It's a great recipe - try them! Warning...there are a lot of steps to make them, but it's worth the work.


Okay, people, last week I didn't have a menu, and only 3 people posted theirs! Memorial Day is a pretty good excuse...but the holiday is over. So get your menus up here! :)

  1. This week is rough- family in town, tickets to a show, etc. So, I've got no idea what night I'm gonna make these, but I'll be making:

    -Red Beans & Rice w/ Andouille
    -Baked Ravioli
    -Black Bean Flautus w/ Spicy Avocado Sauce

    -Steak
    -Baked potatoes
    -Broccoli
    -Tossed salad

    Tuesday:
    -Bean and cheese burritos
    -Spanish rice
    -Tortilla chips and salsa

    Wednesday:
    -Tortellini
    -Tossed salad
    -Garlic bread

    Thursday:
    -Grilled chicken
    -Wild rice
    -Corn on the cob
    -Cherry tomato crisp

    Friday:
    -Eat out!

    Thursday: Steaks on the grill, sides to be determined

    Saturday: Leftovers
    Sunday: Pot roast, mashed potatoes, rolls & salad

  4. WOW! Those enchiladas look yummy! I gotta check out the recipe.

    Here's what we have on tap for the week:

    M: Salsa chicken w/chips topped with cheese & sour cream
    Salad

    T: Cheese tortellini w/cream sauce
    Steamed broccoli/carrots

    W: Beef Stroganoff over rice
    Roasted zucchini/yellow squash

    Th: Chicken pot pie
    Fruit salad

    F: Soup/Sandwiches

    S: Out! Which sometimes can be more work with twins than cooking! :)

  5. Sunday: Ahi Tuna with BBQ'd corn. Didn't turn out so great. I tossed mine and ate a WW frozen dinner.

    Monday: Pizza

    Tuesday: Steak, baked potato, roasted cauliflower, caprese salad

    Wednesday: Golf and out for dinner with my husband

    Thursday: Chicken, mashed potatoes, green beans, salad

    Friday: Hamburgers

    Saturday: Leftovers or out for dinner.

  6. i finally sat down and planned my week, so i may as well share it--if only to make it official.
    monday: chopped italian salad

    tuesday: salmon chowder, bread, broccoli

    wednesday: falafel with pitas, fruit salad

    thursday: chicken caesar, roasted garlic potatoes

    friday: taco bbq at friends' house
    (i'm bringing cheesy, garlicky zucchini and corn dish my amazing mexican friend taught me)

    saturday: curry in a hurry

    sunday: quiche, or pasta if i'm lazy

  7. Hi there -- I'm new to this website and I love it so far. One quick question about those creamy chicken enchiladas: what is the point of all the cream? Is it just to make the filling inside creamier? And if so, why not just add some of it to the chicken mixture itself? Also, do you usually have a lot of the leftover cream to pour on top? Thanks!

  8. I'm loving the weekly menus. It has really helped me stay organized, and it also means I really only have to go to the grocery store once a week (if I remember to pick everything up).

    Here goes for this week...

    Tuesday:
    -Pulled Pork Barbacoa Sandwiches
    -Roasted veggies

    Wednesday:
    -Lemon Chicken
    -Roasted Beets

    Thursday:
    -Relief Society activity, let Chris fend for himself!!! YAY!

    Friday:
    -Leftovers

    Saturday:
    -Out or Margarita Pizza

    Sunday:
    -If we go out on Saturday we'll do pizza, if we had the pizza, then I'll do Grandma buz's meat patties w/mashed potatoes and veggies.

    BTW, I'm totally interested in hearing about Lindsay's Cheesy Zucchini and Corn dish. Would you be interested in sharing?!?

  9. i'm happy to share the recipe for this easy side dish. nothing fancy-- just cut up some zucchini, cut some corn kernels off the cob (or use a bag of frozen corn), saute them in butter with a bunch of fresh minced garlic. season with coarse salt and cracked pepper. when the vegetables are cooked, add shredded muenster cheese and let it melt. it kind of turns into a big cheese blob of stuff, but it tastes wonderful and is nice to serve with mexican food (or whatever!).

    Wednesday:
    At Grandma's

    Thursday:
    Mom and the Kids
    Maybe Grilled Cheese maybe Mickey D's

    Friday:
    Chicken Veggie and Stuffing bake

    Saturday:
    Pizza- Dad's working late

    Sunday:
    Probably at grandma's again!

    Kinda boring....sorry guys!

  11. brittany...the cream just makes it creamy :) helpful, I know. I supposed you could put some cream in the chicken mixture instead, but I like it without the cream in the chicken and I think the point is to have a cream sauce, as opposed to a red or green sauce.

    and, yes, I always have TONS of leftover cream...I pour a bunch on top and still have leftover cream, so I supposed you could definitely cut down on the amount cited in the recipe! :)
