Call For Recipes! BLONDIES

Yesterday I got a hankering for Blondies, you know, butterscotch brownies, chocolate chip cookies bars, whatever you want to call them. (Sidenote: my previous complete and total desire for salty foods this pregnancy is fast slipping away and I'm back to my "I need a treat" self. Phew.)


So, I took myself in the kitchen, got out my Better Homes & Gardens New Baking Book(which I love) and looked up Blondies. The recipe tells you to melt the butter and brown sugar together til sugar dissolves (that stuff is HOT by the way), cool slightly, then add the eggs. During the "cool slightly" phase, I decided to peruse Craigs List for strollers and forgot the "slightly" part...well, when I returned it was hard as a rock, and remelting was a disaster. I started over - this time I cooled "VERY slightly" to avoide the previous mistake and scrambled my eggs in the sugar - what a rookie mistake! I'm ashamed! I gave up.

The last time I made Blondies they weren't that great anyway - kind of got hard overnight. So, I need your help! Please post your best Blondie recipe (with no melting and slightly cooling involved, if at all possible)! This pregnant woman is desperate over here...I had to resort to an Otter Pop for my "treat" last night, which just isn't the same as buttery, chocolatey goodness!

This is the best blondie recipe - I change it a little to add whatever extras I want but it is always a hit

No Blondie recipe here, but just found your blog, and looking forward to coming back...

When I was pregnant.. all I ate were otter pops... seriously. That was my craving.. sad huh.

My Favorite Blonde Brownies:

1 stick butter
2 c. brown sugar
2 eggs
2 c. flour
1 t. baking soda
1 t. vanilla
1/2 t. salt
1 t. lemon juice
a few drops of hot water (just so the batter looks spreadable)
1 1/2 to 2 cups semi sweet choc. chips

Mix all ingredients, spread in greased 9x13 pan. Bake at 375 for about 25 minutes. Simple and delicious :-)

leslie - I WAS craving otter pops early on, but the craving stopped and now we have appx 175 otter pops sitting in a box...I'll have them until my dying days! :) pregnancy is funny...

Looks like you've got plenty already, but here's my new favorite blondie recipe!

Courtesy of Dorie Greenspan's Baking From My Home to Yours (practically my baking bible this summer!) I really enjoyed these blondies! I like that you can play around with the ingredients for what taste you have!

2 cups All Purpose Flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 sticks (8 ounces) unsalted butter, at room temperature
1 1/2 cups (packed) light brown sugar
1/2 cup sugar
2 large eggs
1 tsp. pure vanilla extract
6 ounces bittersweet or semisweet chocolate, chopped into chips, OR 1 cup store-bought chocolate chips
1 cup butterscotch chips or Heath Toffee Bits
1 cup coarsely chopped walnuts
1 cup sweetened shredded coconut

Center a rack in the oven and preheat to 325 Degrees F.
Butter a 9-x-13 inch baking pan and put it on a baking sheet.

Whisk together the flour, baking powder, baking soda, and salt.

Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter on medium speed until smooth and creamy.

Add both sugars and beat for another 3 minutes, or until well incorporated.

Add the eggs one by one, beating for 1 minute after each addition, then beat in the vanilla.

Reduce the mixer speed to low and add the dry ingredients, mixing just until they disappear into the batter.

Using a rubber spatula, stir in the chips, nuts, and coconut. Scrape the batter into the buttered pan and use the spatula to even the top as best as you can.

Bake for about 40 minutes, or until knife inserted into the center of the blondies comes out clean.

The blondies should pull away from the sides of the pan a little and the top should be a nice honey brown.

Transfer the pan to a rack and cool for about 15 minutes before turning the blondies out onto another rack. Invert onto a rack and cool the blondies to room temperature right side up.

Cut into 32 bars, each roughly 2 1/4 x 1 1/2 inches.

Storing: Wrapped well, the blondies will keep for about 3 days at room temperature and for up to 2 months in the freezer.

Enjoy your blondies, hopefully disaster free this time!

I don't know if these are considered "blondies" but they are dang good and get rave reviews whenever I make them. It's from Martha Stewart, so really, can you go wrong?

SKILLET-BAKED CHOCOLATE CHIP COOKIE

¾ c. unsalted butter, softened
2 c. all-purpose flour
½ c. sugar
1 tsp. baking soda
¾ c. brown sugar
½ tsp. salt
1 large egg
1½ c. mixed milk & semisweet choc. chips

1.Preheat oven to 350 degrees.
2.In medium bowl, whisk together flour, baking soda, and salt; set aside.
3.In larger bowl, mix butter and sugars until mixture is light and fluffy, about 2 minutes. Add egg and vanilla; mix until they are fully incorporated. Add flour mixture and beat until just combined. Stir in chocolate chips.
4.Transfer dough to a 10-inch ovenproof skillet, (I just use a 9x9 baking dish) and press to flatten, covering bottom of pan.
5.Bake until edges are brown and top is golden, 40 to 45 minutes. Don’t overbake.

Blondie Brownies
Ingredients:
1 cup sifted flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chopped walnuts
1/3 cup butter OR margarine
1 cup packed brown sugar
1 egg - beaten
1 tablespoon vanilla extract
1/2 cup white chocolate chips
3/8 cup maple syrup
1/4 cup butter
3/8 cup brown sugar
8 ounces cream cheese - softened
1/2 teaspoon maple extract OR flavoring
Directions:
Sift together sifted flour, baking powder, baking soda, and salt. Add chopped nuts. Mix well and set aside.

Melt butter. Add brown sugar and mix well. Add egg and vanilla and blend well. Add flour mixture, a little at a time, mixing well. Stir in white chocolate chips. Spread into a 9" square pan. Bake at 350F., 20-25 minutes, or until tester inserted in center comes out clean or with slightly fudgy looking crumbs.

Combine syrup and butter, cook over low heat until butter is melted. Stir in brown sugar until dissolved. Remove from heat and beat in cream cheese and maple extract until smooth. Heat again either over low heat or in the microwave at short intervals to reach desired sauce consistency.

Serve sauce over warm blondies topped with vanilla ice cream.

I call these Butterscotch Brownies:

1 stick butter
2 cups light brown sugar
2 eggs
1 1/2 cups flour
2 tsp. baking powder
1/2 salt
2 tsp. vanilla
1/2 cup chopped nuts (optional)
6-12 oz. chocolate chips
(optional--use Toffee bits too)

1. Melt butter. Cool A FEW MINUTES. (I set a timer for 5 minutes or so.)
2. Beat in eggs. Stir in dry ingredients.
3. Add vanilla, nuts, chocolate (& toffee if you're using it).
4. Spray 9X13 pan with Pam. Put batter in pan. (At this point I sprinkle a few additional Toffee bits on top.)
5. Bake at 350 degrees for 25-30 minutes.

Aunt Ruth's Picnic Blondies
1/3 c butter
1 c brown sugar
1 egg
1 tsp vanilla
1 c flour
1/8 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

No Method! How's that for a classic family recipe?

9x9 pan, sprinkle chocolate chips on top.
350 x 20 minutes

I DID! And it was totally worth messing up my blondies for... :) I'm so excited, I picked it up last night (found on craigslist...my first craigslist purchase in fact). Got a GREAT deal on a beautiful Peg Perego stroller and infant car seat...Red and Charcoal. It's silly how excited I am about it! :) Now maybe I can focus on proper blondie assembly...
