Wow, 50 weeks of menus...which means I've been at this for almost a year. Crazy!
This week marks my first as a mother of two without ANY help. Yes, last week we didn't have family staying with us, but at least friends brought dinners all week - which were awesome by the way! And I was able to freeze a few meals from what our moms cooked and friends brought to us...that will be a big help over the next week or two.
Anyway, back to REAL meal planning. Hope I remember what I'm doing. Still no big promises, folks...this is definitely a transition week!!
MONDAY:
- Leftovers...of which we have many from last week
TUESDAY:
- Nachos, mini tacos and guacamole (the mini tacos were brought by a friend last week)
WEDNESDAY:
- Chicken Tetrazzini (in the freezer, thanks to Nate's mom!)
- Salad
THURSDAY:
- Leftovers
FRIDAY:
- Spaghetti
- Salad
- Bread of some sort
SATURDAY:
- Eat out
SUNDAY:
- Chicken Corn Chowder (in the freezer, thanks to my friend Emily!)
- Good bread
- Salad
Okay, now it's your turn...what are you eating this week?

Congratulations on the baby! I feel like dinner is the bane of my existence. I'd be fine with a cup of yogurt or a frozen meal at night but dear hubby is a different story.
He's taken over cooking for the most part b/c I freaked out last month trying to handle working full time, commuting an hour and a half in Manhattan each day, pumping at work for our 6 month old who is still nursing, spending time with our 3 year old and trying to get all of the house stuff done. So I do all of the food planning and shopping then tell him what's on the schedule.
Anyway, that's probably way more than anyone needs to know.
This was based around having tortillas, oranges, limes and cilantro in the house from Sunday's meal.
Sunday
Tortilla Soup (fast and easy to make, Cook's Illustrated Soups & Stews)
Tamales (frozen)
Nachos with the works
Monday
Eggs with spinach and cheese on tortillas
Tuesday
Leftover Soup
Wednesday
A Thai Chicken Salad over Rice Noodles, cukes and red peppers (Bon Appetite).
Thursday
Black Bean Salad Burritos with orange and cilantro (Good Housekeeping)
Friday
Spicy Orange Chicken stirfry with stringbeans (Cook's Illustrated Quick Recipes)
Saturday
Dinner at my sister's (thankfully)
Sunday
Roast Chicken
Brocolli or Brussell Sprouts (roasted, so good)
Cranberry Sauce
Rice or Grilled Potatoes
wow! so many menus - thank you everyone!
welcome to all the new readers and sharers - I'm very happy to have you participating!
and again - thanks for any and all congratulations on the baby! :) and don't be that amazed I'm still posting...it's decreased a lot lately, but I hope to ramp up again soon. thank YOU all for sticking with me!!! :)
