Week 52 Menu

Our good friends (remember Nikki, Christmas cookie extraordinaire?) recently got back from a trip to Nikki's home state...Hawaii. Can you imagine growing up there?! Anyway, they brought us a beautiful, deliciously ripe pineapple. I don't know how they got this dangerous-looking fruit through security...but I'm glad they did. It was so good and sure did make for a pretty picture (in fact, I think she brings me beautiful foods just so she gets mentioned on the blog...keep bringing it, Nikki!).


Here's my menu. I can't wait to see what you're all eating this week!

MONDAY:
- Beef Stew
- More of that good Trader Joe's bread

TUESDAY:
- Pasta of some kind...I just cleaned out the pantry a bit and discovered MANY bags of open pasta. Any suggestions for something easy and yummy that isn't boring spaghetti & red sauce?

WEDNESDAY:
- Orange Chicken (different from Costco & TJ's...be sure to check out this delicious recipe from Nate's grandmother)
- Rice
- Salad

THURSDAY:
- Letovers

FRIDAY:
- Chicken Parmesan

SATURDAY:
- Eat out

SUNDAY:
- Beef Stroganoff
- Salad
- Rolls

You could make macaroni & cheese with all of your opened pastas...
We love home-made mac & cheese at our house.

MMM Mac and Cheese sounds good! Or a baked ziti type of dish. Anything baked with cheese and sauce is always delicious...or some type of chicken and veggie and pasta casserole!

I wish I had a menu. I don't. I'm having shoulder surgery on Wednesday so I have a feeling I won't be cooking any time soon!! :(
When I come back I'll have lots of yummy Weight Watchers recipes to share...I've been on it for two weeks and I've had some really good meals!

Jane - I love the Classico brand Sun-Dried Tomato Alfredo sauce. I toss on some feta cheese and a few pine nuts - maybe a few more sun dried tomatoes if you have them. Voila!

Pesto, Bolagnaise (not exactly easy unless you happen to have the meat mixture in the freezer:), Pasta salad using salad dressing

Our menu:
Mon--Pork Chops, Baked Potatoes, Brocolli

Tues--Bean soup, cornbread, salad

Wed--Pasta with pesto, salad

Thurs--Tri tip, potatoes, vege

Fri--Date night--leftovers for the kids

Sat--Vege Lasagne, Bread, Salad

Sun--IKEA Meatballs, rice, vege

I am traveling this week so a couple are 'suggested' from me, will be determined by my husband!

Monday: leftover soup from the weekend, crusty bread (I made what I call 'clean out the refrigerator soup,' chock full of whatever veggies I have, beef broth this time, plus crumbled peppered bacon and egg noodles)

Tuesday: baked pork chops, alfredo side noodles, steamed broccoli

Wednesday: Quiche (frozen - this is where the husband comes in)

Thursday: Leftover Quiche ... or who knows (I am still away)

Friday: dinner at our neighbor's

A very light cooking week for me!

This coming Sunday I'll roast a whole chicken and do mashed potatoes & the whole deal ... partly to have cooked leftover chicken for future meals.

Pasta options: we love it with a bit of sauted onion, garlic and freshly grated cheese. Another easy choice is to throw it into a stew. Not that people in CA need to eat stews...

My favorite easy pasta recipes are chicken pesto pasta (chicken, pesto, pasta, cream or milk & parm. cheese). We also enjoy carbonara (I use a Rachael Ray recipe).

And the menu..

Monday- chili cornbread casserole, oranges, fresh veggies

Tues- pulled pork sanwiches, vegetables & maybe oven fries

Wed- crockpot chicken & rice
salad or vegetable

Thurs- leftovers

I haven't posted my menu in a long time (I'm so ashamed). I'm back on the wagon now. Here goes nothing...

-Book club (eat out in the North End of Boston...pasta, here I come!)

Here's my favorite non-Italian way to make pasta...sorry I'm a little slow for your menu this week!

Mexican-Style Pasta Bake

6 oz dried bow tie pasta (2 1/2 cups)
1/4 cup chopped onion
1/4 cup chopped red sweet pepper
1 1/2 TBSP butter
1/4 cup flour
1/2 tsp salt
1/4 tsp ground cumin
1 1/2 cups milk
3 oz Colby cheese, cubed or shredded
3 oz Monterey Jack cheese, shredded
1 cup bottled salsa
1/3 cup halved olives
chili powder

Preheat oven to 400˚. Spray a 2-quart baking dish with cooking spray. Cook pasta according to package directions. Drain and return to pan. In large saucepan cook onion and pepper in butter over medium heat about 5 minutes, ‘til tender. Stir in flour, salt and cumin. Add milk all at once. Cook and stir until mixture is thickened and bubbly. Reduce heat to low. Stir in Colby cheese and half of the Monterey Jack cheese, until cheese is melted. Pour over drained pasta and stir to combine. Layer half the pasta mixture, all the salsa, then remaining pasta mixture in the prepared baking dish. Sprinkle with remaining Monterey Jack cheese and olives. Sprinkle lightly with chili powder. Bake, uncovered, about 20 minutes or until bubbly around the edges and heated through. Let stand 5 minutes before serving.

26th, Saturday - Leek and Potato Soup, rustic bread

27th, Sunday - Chicken Fried Steak Sandwiches

28th, Monday- Take-out (gymnastic night)

29th, Tuesday - Taste Testing Crock Pot Garlic Brown Sugar Chicken served over Gemelli noodles, Salad
