Week 73 Menu & Happy Father's Day!

Happy Father's Day to you dads out there! (I know there are at least a few of you who read this!)


We ate well for Father's Day today, including smoothies in our new blender. Our old blender STUNK, so I'm very excited about our new Cuisinart blender. It's no Vita-Mix, which is still my dream blender, but until I can shell out the cash, this puppy is working great. Smoothies here I come!

I might actually make this for "date night" instead of going out. Thought I'd share the recipe -- it's delish!

“Salmon Loves Bacon” with wilted arugula

Is there really any better sauce than bacon “essence,” i.e. drippings? It self-bastes the salmon and works as an all-in-one sauce.

Makes 4 servings.

4 (5- to 6-oz) center-cut pieces skinless salmon fillet (about 1 1/2 inches thick)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons horseradish, 2 teaspoons garlic, mixed together
4 bacon slices
2/3 cup sliced shallots (2 large)
2 tablespoons olive oil
1 large bunch arugula, large stems discarded

Utensils:
4 (10- to 12-inch) metal skewers

Preheat broiler and place broiler pan about four inches from heat.

Wash arugula and remove stems; set leaves aside.

Pat fish dry and sprinkle with salt and pepper, then spread curved sides with horseradish-garlic mixture. Lay one bacon slice lengthwise along top of each fillet, tucking ends of bacon under fillet (ends will not meet). Thread 1 skewer through length of each fillet, entering and exiting fish through bacon to secure it.

Arrange fish, bacon sides down, on preheated rack of broiler pan and broil three minutes, then turn over and broil until fish is just cooked through and bacon is crisp, three to four minutes more.

While salmon broils, heat oil in a 12-inch heavy skillet over medium heat, add shallots, stirring occasionally, until they begin to brown, three to five minutes. Add arugula and cook, covered, stirring occasionally, until just wilted, one to two minutes. Season with salt and pepper.

Serve salmon over arugula and shallots.

It's another crazy week in our household, but as I read other comments, I am comforted. Everyone has a crazy life!

Sunday: Dinner at my mom's for father's day. Believe it or not, I made baked beans for the first time! They turned out great!

Monday: I hosted a Silpada (jewelry) party at my house. I made chinese chicken salad, sub sandiwches, shrimp cocktail, and chips and dip. I also get to enjoy ordering $300 in free jewelry!

Tuesday: Island country ribs and rice and broccoli bake

Wednesday: Dinner at the lake, which will probably be hotdogs!

Thursday: Dinner out with in laws

Friday: Whatever I can find because we are leaving Saturday for Las Vegas to see Elton John in his second to last concert at Caesar's!

Saturday: Dinner somewhere fabulous in Las Vegas, a foodie's heaven, before the concert.

Sunday: Dinner at my favorite restaurant, Rosemary's, in Las Vegas. It's off the strip and run by a husband and wife. We sit at the "food bar," which overlooks the prep area of the kitchen....last time we were there, the owner and head chef, Michael Jordan, invited me back to the kitchen for a tour! Oh my word...I thought I had died and gone to heaven. I almost signed up for culinary school when I got home! Did I mention that Chef Michael used to cook with Emeril? :)

I didn't plan a whole week's worth of food, but here's what I did make.

Pepperoni Stromboli

-- I used pepperoni, but I suppose other things can go in. Maybe I'll try that next time.

1 pack of Phylo dough
1 bag of sliced pepperoni
minced onion in jar
oregano
pizza sauce (any type you like, but myself I use a spicy pasta sauce)
grated asiago cheese
wax paper

Couldn't be easier to make and you can prepare ahead and leave it in the fridge.

Lay wax paper on table. Unwrap phylo dough. I bought, um, I can't remember the brand, but it wasn't Pepperidge Farm. It was Athens I think. It came with enough that I did 6 stromboli's!

So, lay out the dough on the wax paper about 5 sheets. Careful, they're very thin. On top of that lay down some sauce. On the shorter sides leave some room. One one of the sides I leave a really tiny spot and on the other side I leave about 3/4" an inch or so.

After you've laid down the dough and sauce lay down some asiago cheese. After that pepperoni. Not too high because you need to roll this up. On top of the pepperoni more asiago cheese. Sprinkle with oregano and put some minced garlic on top.

Wet the ends you left open and begin to roll this up fairly tight. The wet ends will seal it shut once you're done rolling.

You can brush the top with egg if you want, but I never bother.

Bake for about 20-25 minutes.

One roll feeds 2 people and on the side you can make some kind of other thing. I made a roasted red pepper and tomato soup. I can't get enough of it. It's usually in the organic aisle of the supermarket in a "juice box" like box.
