Happy Easter!

Happy Easter and Happy Spring to everyone! The Easter Bunny visited Cate...oh what fun! I was talking to my friend Ruth yesterday and she shared her family Easter tradition with me...eating Mediterranean-type food for Easter dinner. What a fun and thoughtful way to celebrate Easter!


The Song of the Week is "Spring" from Vivaldi's The Four Seasons. It's hard to decide, but I think it is probably my favorite of Vivaldi's seasons. And perfect for today!

a few ideas off the top of my head:

quiche (ham, cheese and broccoli)

chicken cordon bleu

lentil soup (see my yummy recipe on the recipes-main dishes page)

ham and potato bake (see link to recipe on my easter menu post)

I have a crustless broccoli & cheddar quiche recipe that you could definitely add ham too. It should still be up on my main page, I think.

Also, one of our favorite seems-fancier-than-it-is recipes are ham & mozzarella paninis. I make them on good sourdough bread, plenty of cheese, ham, and a sprinkling of salt, pepper, and dried rosemary.

How about a hawaiian pizza?

I don't make ham a ton, but right now I could totally go for an egg and ham english muffin type sandwich, or a hawaiian pizza, or in an omlette. Sorry these aren't incredibly gourmet suggestions. I didn't eat breakfast today, so I have breafast food on the brain.
