Week 20 Menu

Wow - the weeks are really passing by. Can't believe it's already time for another menu! I'm super excited for Tuesday night's dinner...I've really been wanting good old fashioned Memorial Day-type food lately. Please share your menus! Remember...I don't care how good or bad your menu is, we just want ideas! :)

MONDAY:
- Baked French Toast (this recipe is SERIOUSLY good)
- Hashbrowns
- Fresh Fruit

TUESDAY:
Summer Picnic Dinner!
- Grilled hamburgers
- Potato Salad
- Watermelon
- Baked Beans


WEDNESDAY:
- Leftovers

THURSDAY:
- Chicken Masala (Trader Joe's simmer sauce)
- Rice
- Veggie

FRIDAY:
- Butternut Squash Soup (didn't do last week)

SATURDAY:
- Eat out

SUNDAY:
- Beef Stew
- Rolls

My sister-in-law has a great recipie for pita's and hummus: http://the-mother-blog.blogspot.com/2007/06/mmmmpitas-and-hummus.html It is pretty easy and the pitas don't need to rise very long. I think it makes a great meal in itself...even Reed enjoyed it. We also used the pitas the next day with turkey and cheese warmed, peppers, onions, tomatoes, lettuce, and avacados. It was a great and easy second dinner! Good work on the blog. I like stealing ideas!

I toast deli rolls. Then heat up the sliced roast beef and provolone (both from the supermarket deli). And I use Johnny's Concentrated Au Jus sauce to make my dipping sauce.

I got this recipe from a friend...(If you can call it that) we've done it for chicken too. I just get a pork roast from Coscto, throw it in my crockpot and put in about a cup and half of salsa - cook it all day and then shred it in the crockpot. The other night I had a bunch of limes that were going south and I squeezed them into the meat. Really good & easy. My friend throws in a taco or fajita spice packet but I found that it gets way to salty that way. Works great for burritos, tacos, quesadillias, tostadas and it freezes really well.
