Week 63 Menu
We made it to our new apartment...and the work continues! My plan this week is to get this kitchen unpacked and maybe cook a real meal by the end of the week...cross your fingers for me. Until then, please please please post your menus!!
Monday: Chicken Parm Pizza Tuesday: Pork and Potato Casserole Wednesday: Breakfast for dinner Thursday: Chicken, noodles and broccoli Friday: Out of town for the weekend visiting friends!

Second, I talked with your brother and he was simply delightful! The survey was fun and he was so nice.
Third, here is what dinner looks like this week for the cupcake family:
Sunday: Roast chix, mac-n-cheese casserole, broccoli Mon: Lemony shrimp and roasted veg risotto, artichokes, salad Tues: Country style ribs, bacony beans, green beans, cottage cheese (it's a weird tradition) Wed: Green curry chix (tj's sauce), rice or cous cous, veg and salad Thurs: My women's group - no cooking for me!! Fri: Birthday celebration for my mom - her choice! Sat: Pasta with Turkey meatballs, salad, veg
Hello Jane, Here's your housewarming gift...I'm finally posting a menu, heck, maybe a recipe too!
Monday: Leftover Moroccan Stew & a side of Spicy Sweet Potatoes 1 1/2 pounds sweet potatoes (about 2 medium), peeled, halved lengthwise, and cut into 1/4-inch-thick half-moons 3/4 pound red onions (about 1 large), peeled, halved, and cut into 1/3-inch-thick wedges 1/3 cup olive oil 2 teaspoons chopped fresh thyme 2 tablespoons ketchup 2 teaspoons chili powder 2 teaspoons salt 1 teaspoon fresh-ground pepper 1 lime, cut into 6 wedges
1. In a large microwave safe bowl, toss sweet potato slices and onion wedges with the olive oil, thyme, ketchup, chili powder, salt, and pepper. 2. Cover & microwave for 5 minutes. Toss & check potatoes for doneness. Repeat 5 min. microwaving/checking until potatoes are soft. 3. Serve with lime slices.
Wednesday: -Knitting Club at my house. I'm making three kinds of dips...crab dip with crackers, avocado dip with veggies, and white bean dip with veggie chips. We're also having red wine spritzers. Mmm...
Thursday: -Muenster, turkey, and apple quesadillas -Sliced watermelon
I hope your unpacking goes well. We unpacked our kitchen last when we moved, and I ended up throwing away half of our silverware on accident. Luckily I realized it just a day later, so Corbin and I were able to go through the dumpster looking through every crumpled piece of paper over again! Memories...may yours reflect more patience than mine.
Saturday: Carrot soup with pumperknikel bread
Sunday: more soup...Garlicy bread soup with chicken salad sandwiches
Monday: Tex Mex salad with chicken, beans, corn, jicama, and avocado

Monday - Burgers, deviled eggs, beans, and homemade mac & cheese Tuesday - Wiener schnitzel, green salad and german potato salad Wednesday - Goulash with egg noodles Thursday - Chicken, asparagus and cheese crepes with steamed rice Friday - Shrimp scampi with rice Saturday - Meatball subs, salad, and fries Sunday - Not sure yet, but I've gotten so many great suggestions from reading these comments! :-) Thank you!
No one but Jane will read this, so I feel comfortable telling you that I've given up control of my kitchen for 4 nights a week. My oldest cooks on 2 nights and the 5 year old cooks 2 nights. Heaven help us and our digestive systems! Our menu: Monday: scrambled eggs, sausage with carrots and broccoli. Tuesday: Taco Salad Wednesday: Veggie burgers, rice and broccoli (the 5 year old likes broccoli) Thursday: A Surprise. OHMYGOSH! Friday: I'm having Lasik, so I intend to eat ice cream to recoup. Who knows what the father of my children will feed them. Saturday: Hummus, pita, Sambusek and quail from a Mid-eastern restaurant. Sunday: dinner at a friend's.
I am a mom/graphic designer who doesn't mind cooking but can't ever come up with what to cook. This Week for Dinner(TM) is a place where we can share ideas for weekly menu planning. wednesday: dinner crepes (not sure what we'll put inside, something that goes with goat cheese--spinach, carmelized onions)
