I am back in the GRIND, folks. I have a lot of freelance work right now, which means I really need to get organized food-wise. This week I started doing dinner food prep while Cate eats her lunch. It was very helpful...if you're home during the day, definitely a good tip for making dinnertime a little easier.
Here's what we're eating this week (probably). Bring on the menus! I seriously read through them every week to plan my menus. I'm so happy you all share!
MONDAY:

-Some kind of chicken? Pound it out, put some goat cheese and herbs in the middle, roll it up, spray with Pam and sprinkle with bread crumbs
Thursday:
-We'll be at the beach in So. Cal in our trailer. We'll have turkey sausage and spinach stuffed manicotti (already prepared!:) with salad and bread
Friday:
-Dinner in Huntington or Newport Beach
Saturday:
-Pick up fresh fish and cook according to fish monger's directions!
Jane, this is a great blog. How do you find time to make such great meals? Seriously, I don't know how you do it. I am just not that great in the kitchen. Also, is your grocery bill a lot of money or is it not too bad. I totally want to follow your example but I am scared we will be living out of our car if we eat like a king. :-) Give me some tips!

Tuesday:
Real Simple lasagna and salad
Wednesday:
Sloppy Joes and some Mac and Cheese I have frozen in the freezer
Thursday:
TBD--I am in the mood for Chile!! But it is so warm out! SO I suspect I'll make something else with my ground turkey.
Friday:
Friend's house for a dinner party. I'm bringing an appetizer. I'm bringing some spicy queso dip!
Saturday:
Eat out
Monday: rotissorie chicken, baguette, salad
Tuesday: spaghetti w/ garlicky green beans
Wednesday: quesadillas w/ leftover chicken, spinach and cheese
Thursday:some kind of chicken in crockpot
Friday:grilled cheese (munster is our fave), tomato soup, fruit
Saturday: breakfast for dinner or leftovers

planning a weekly menu totally helps me save money right off the bat b/c I only buy things that I actually use. we definitely spend less now that I am consistently planning.
I also shop at least 2 stores each week to save money.

trust me, we don't eat like kings and I'm not a fancy cook at all. :) definitely look at the budgeting post for ideas!
oh - I think when life is normal I probably spend $80-100 per week...I never break $100, actually. but that's not counting eating out probably 1 night a week.

We had a three-day weekend here in Massachusetts (Patriot's Day/Marathon Monday was yesterday), so I'm a little off on my days here. I'm posting late, but here ya go:
