Week 26 Menu

I have no menu this week, and for a VERY good reason...it's SUMMER VACATION!!!


Cate and I leave for our East Coast adventures tomorrow! This week we'll be in New Hampshire with my in-laws and then a week on CAPE COD!!! I am so excited! Finish up the trip with a week in New Jersey with mi familia and you've got yourself a vacation. I can't wait and I'm super excited to eat all the food that I can't get out here in sunny California (real bagels, real subs, real cannolis, new england hot dog buns...good thing I'm eating for two). I will definitely do some posting while I'm on the road, so please keep visiting!

As for menus...you guys need to share your menus for SURE for the next 3 weeks because I'm not planning on doing any meal planning! Time to inspire one another, which I am certain you will do beautifully.

I tried your fruit dip this morning to go with Strawberries- Yummy! I think this would be great to put on a dessert instead of whipped cream, like maybe brownies or angel food cake.

Monday:
Pita Pizzas
Kids-spaghetti sauce w/squash
Adults-roasted red peppers and feta
Watermelon

Tuesday:
Tex-Mex Chicken and Rice

Guacamole, Salsa, Sour Cream

Wednesday:

I live in NJ and although i complain about it and get mad that we have no money after all of our taxes, tolls and more taxes, I could never live anywehre else because of the food.
When I go to other parts of the country it is just not the same bagels or pizza.

Monday: black bean burgers (100% veggie and are awesome)

Tuesday: white chili

This is the easiest chili in existence.
3-4 cans great northern beans (or any white bean)
1 small can green chilis
1 onion chopped
1-2 garlic cloves pressed
some chicken
1 jar alfredo sauce
chili seasoning

Wednesday: Wedding Anniversary...don't know what we're making yet.

Thursday: Ricotta and peas pasta with salad

Friday: Going out to eat for our wedding anniversary. I like to milk holidays for all I can get :)

Saturday: chicken quesidillas with fruit

Well, Josh is making progress, but hasn't healed completely. Here is this week's menu, which he will be eating mostly as leftovers because he gets home too late in the evening to eat before bed.

Monday:
-Baked Potatoes topped with broccoli & cheese

Tuesday:
-Rotisserie Chicken
-Brown Rice & Mixed Veggies
-Roasted Asparagus

Wednesday:
-Asparagus, Snap Pea, and Avocado Pasta

Thursday:
-Chicken and Veg Tacos
