Week 56 Menu

Tonight is leftover night...I went out to get Cate some food and found this on the dinner table instead...


Cate and her dad were busy making snowmen. It was so cute. Hey, if there's no dinner on the table, this sure is a good substitute.

By the way - several of you have commented in the last few weeks about using my recipes (beef stew, tostada goop for enchiladas, pizza dough, to name a few...check the Recipes: Main Dishes page for recipes). I love the positive feedback and I'm so happy the recipes are working for you - yea! :)

I have a LOT of carry-overs on my menu from last week...I think I must have been half asleep when I went to the grocery store since I forgot half my ingredients! You may be wondering what we ate at all, and, to be honest, I don't really remember. We didn't starve, so that's good.

MONDAY:
- Either hamburgers or BBQ pork
- Chips
- Salad

TUESDAY:
- Beef Stew (Cate's current favorite)

WEDNESDAY:
- Pat's Oriental Chicken Salad
- Mini egg rolls (from the frozen food aisle, of course!)

THURSDAY:
- Leftovers

FRIDAY:
- Breakfast for dinner
- Fruit
- Hashbrowns

SATURDAY:
- Eat out

SUNDAY:
- Chicken Salad sandwiches
- Chips
- Fruit & Salad

The butternut squash with shallots and sage was my favorite new menu item from last week…it was delish! You can find the recipe on Epicurious…
Since I’ve already had Sunday dinner from this week…I can tell you that those short ribs were amazing. I’m especially fond of anything with chipotle peppers in it!

Sunday: chicken cordon bleu, mashed potatoes and gravy, rolls, corn, salad, fruity jell-o

Monday: Out to eat to Cheesecake Factory for our belated Valentine's celebration (husband on night call at hospital on V-day; hopefully fewer crowds!)

Tuesday: BBQ Ranch chicken salad (better not get this Monday night :)) with some sort of bread

Wed: Sweet and sour meatballs (the turkey meatballs from TJs are incredible...I picked up 5 bags when I visited SD a few weeks ago and brought them home on the plane...I miss TJs!), rice, steamed carrots or broccoli

Thurs: pasta with chicken alfredo sauce, salad, garlic bread

Friday: leftovers or something fun

Saturday: BBQ sloppy joes, chips, carrots and dip

I actually have a menu planned this week, but it might change because I'm trying something new. On Tuesday we get our first delivery from a company that brings organic produce to your home each week. Has anyone out there tried it?

Anyways:

Monday:
Pork Roast with applesauce
Roasted veggies
Salad

Tuesday:
Peanut Noodles
Stir fried veggies
fruit

Wednesday:
Curried Garbanzos with Rice
Naan (TJ's freezer)
fruit/veggie

Thursday:
Gnocchi with tomato sauce (more TJ's)

I don't usually end up making the designated dinner on the designated night. But I usually make them all sometime during the week. I put a list on my fridge door and decide what I have time for every day.
