Week 76 Menu

As I was making dinner tonight, I couldn't help but think how much I love bagged spinach. Pre-washed, super healthy, good hot or cold. Perhaps the perfect food?


This week's menu is very short...because we are going on VACATION! East coast-bound on Wednesday, then off to BERLIN on Friday. Yup, you heard me right. Berlin for 1 week then Paris for 1 week! I can't wait! Anyway, I'm only cooking one night this week. That may be even better than traveling. Just kidding.

I am going to keep posting while I travel, so please keep visiting the blog. I'm excited to share my culinary adventures with you!

MONDAY:
- Pasta Salad a la Kristy Tayler (click here and see Valerie's comment)
- Good crusty bread

TUESDAY:
- Packing...therefore eating out!

WEDNESDAY:
- Flying!

THURSDAY:
- At my mom's

FRIDAY:
- Dinner at JFK waiting for our red-eye flight to take off

SATURDAY:
- HELLO BERLIN!

SUNDAY:
- More Berlin! :)

I'm counting on all of you the next few weeks to share your menus...you need to inspire one another! Show us what you got! (I'll still do the weekly menu post even if my menu involves a lot of eating out...which it will!)

Will you be taking your daughter with you to Europe? If so, I'd love to hear how it goes. I've traveled a lot with my daughter, and I've been to Europe a couple of times. But the thought of combining the two is very daunting.

Well...Anna (6-month-old) IS going with us since she still relies on my for sustenance. :) But Cate will be staying with our parents here in the states. Yea! It will be more fun for her and for us that way. I'll definitely let you know how traveling with a baby over there goes!

Not sure about the days, but I'll be making:

-Fish Tacos w/ pico de gallo, chips & guacamole
-Spinach and Black Bean Quesadillas w/ cilantro-lime rice
-Oven Omelet w/ bacon, potato and cheddar

(simple the husband is working late!)

Burgers and Fries or we may eat out!

Leftovers or Burgers

Have a great time, Jane! I am jealous. Anna will be fine...babies can be extremely flexible. Enjoy a chocolate croissant in Paris at a Patisserie. Here's my menu:

Sunday: BBQd Hot dogs and leftover sides from 4th of July party

Monday: Pizza at the in laws

Tuesday: Salmon with rice and veggie

Wednesday: Friends over for dinner. We're having steak, twice baked potatoes, corn salad and homemade ice cream with sundae toppings.

Thursday: shrimp tacos with homemade pico de gallo

Friday and Saturday: out for dinner or throw something together. We leave for vacation at the beach on Monday.

Don't faint. Yes, it is me with a menu. I need to make sure and post my menu with you in order to be accountable. I have been super lame in the dinner department since we found out we were moving. But first, have a wonderful time in Europe! I can't wait to hear all about it. Okay, I just finished my grocery shopping and have put everything away, so here is our not-so-fancy menu.

Pizza kabobs

Chicken and cheese rolls

Tuna sandwiches and chips

Friday
Stir fry

Super nachos

Roast and vegetables

Taking my mom to dinner!

Penne with chicken, sun-dried tomatoes and artichoke hearts

Phew! My husband will be so happy to be back to planned dinners. Have a safe trip!

Wanted to wish you a safe and awesome vacation! I don't know about Berlin but I think about my time in Paris everyday of my life! Good luck taking it all in!

Okay, it's already Wednesday but I did plan somewhat of a menu this week so I'll go back to what I did to make it feel like I accomplished something! Hope you are really enjoying Europe, I love to travel there. :-)

Monday:
Fettucine with vodka sauce (I add in a couple cloves of minced garlic, a can of diced tomatoes and fresh basil, yum!)

Tuesday:
Taco night

Wednesday:
Grilled chicken breasts over big salad!

Thursday:
grilled cheeses & soup

Friday:
Takeout from the local Thai place

Saturday:
Going to the NJ shore ... getting a lobster from a great outdoor fish market!
