I am feeling SO uninspired about this week's menu. Nothing sounds good and I definitely don't feel like cooking. Can you believe I'm already 31 weeks prego?!?! It is flying by so fast...I think the speed of this pregnancy is what's making me tired! I definitely need a personal chef, and while we're at it can you throw in a cleaning person, a stylist, a nanny...
I made this Martha Stewart Mac & Cheese recipe tonight since several of you recommended it. Delish! It made enough to feed my entire apartment complex, so half went in the freezer. Hopefully it freezes well. We shall see!

I don't have a menu prepared for this week... My sweet son has croup and I've been taking care of him and havn't had a chance to sit down and make a menu. But, I'm thinking I will try that mac and cheese one night this week and every Sunday morning I make buttermilk pancakes and morning star sausage for breakfast. I just found your post last week and I was so inspired, I made a similar post on my own blog! The reception I've received isn't quite as welcoming as yours. I felt like most of my friends thought I was braggin on my menu so I'm not sure I'll continue. I can just come visit yours though! So even though the week is 1/2 over, here's my menu:
Sunday- Frittata with sausage, mushrooms, peppers, cheese grits, biscuits and gravy
Monday- Southwestern Turkey-Cheddar burgers w/grilled onions, mushroom risotto, oven grilled veggies
Tuesday - Chicken pasta over romaine
Wednesday - my wonderful mother is cooking Salmon in puff pastry
Thursday - clean out the freezer - Chicken Enchilada casserole for me and Chicken Pot Pie
Friday- turkey sandwiches with sliced apples and brie, roasted red pepper/tomato soup
Saturday - take out

Hi Jane! I work with your lovely Mom and love reading your blog ... have just started printing recipes to try. I love to cook although I'm not so good about doing it all the time. I also have a little 2 year old girl named Grace and a husband to feed - fortunately they'll eat pretty much anything!
Here is my menu for this week:
Monday - leftover stuffed green peppers from Saturday
Tuesday - 'Bistro' chicken
White rice, tossed salad
(Bistro Chicken easy recipe ... chicken breasts browned in a skillet, remove & cook 1/2 c chopped onions 5 min, add 1 14oz can diced tomatoes, italian seasoning, 1 can of Campbell's french onion soup, cook that together to reduce liquid 5 min, pour sauce over chicken in a casserole dish, add swiss cheese on top & bake for 20 min!)
Weds - chili (frozen from a weekend cooking), Jiffy corn bread
Thurs - take out
Friday - tacos
Saturday - I'm going to attempt a recipe for potato leek soup in the crock pot
Sunday - pot roast, baked potatoes, asparagus
