Phew! What a week! Thanksgiving was great, and we have TONS of leftovers to tide us over for a while. Thanks to my sister who was a big help! Amazingly, my feet didn't swell up to the size of watermelons like they did 3 years ago. I only took one picture of all my Thanksgiving food...and this is it: smushing up the cranberries for the slush, which was as yummy as ever.
Seeing as how I'm a mere 3 weeks from my due date, not sure how much cooking I'll be doing the next little while. Guess we'll see! I'll plan menus anyhow...can't hurt to have a plan!

Can you share your chili and Cornbread pancake recipe?? I think my family would LOVE those!
Sure! But I think I actually got the cornbread pancakes from Jane!!! At least it is a variation of hers so she might be able to help as well.
My Chili is standard--I use (browned) ground turkey, onions, beans, diced tomatoes, tomato sauce, Worcestershire sauce, chili powder and pepper in my crock pot. I'm not so much for measuring...I just dump it all in there! We love SPICE so I use a lot of it.
The cornbread pancakes are super easy and SO good at the bottom of a chili bowl!
I just use some Jiffy cornbread mix (follow recipe), add some shredded cheese, a little bit of sour cream, and drop spoonfuls onto a griddle. They quickly cook up into something yummy!
We pour our chili over the pancakes!

CORN CAKE TOPPERS
These are awesome with chili! Mix Jiffy cornbread mix, following the corn pancakes directions on the box. Sometimes I add a bit of sour cream. I also add chopped green onion and shredded cheese. Cook on buttered griddle like pancakes. Top your chili and enjoy!
Sometimes I don't but the cheese in the batter... makes the pancakes a little stickier on the skillet, so I'll put the cheese on the chili, then the corn topper on top of that.
*sigh* I have a stupid house guest coming for 10 days! My hubby's buddy from high school that thinks Denny's and Burger King are acceptable dining establishments is coming on Weds. As a result we're going very "meat & potatoes" this week. (In no particular order.)

-Pork Chops w/Rice and Broccoli
-Steaks w/Baked Potatoes and Cabbage Salad

So you all have really made me want to make cornbread pancakes! I think they would go great with a soup I am making tomorrow night (ham & potato). I have cornmeal but no boxes of Jiffy -- would someone mind posting the directions for the pancakes on the box? Thanks so much!
