Week 67 Menu

We had the yummiest mango this morning. Worth the work, I suppose...does anyone have a "trick" for cutting mango? Or is it just a lost cause? Regardless, I love it!


Yeah, yeah, my menu's not so different from last week...for some reason I ended up not cooking a lot of what I had planned, and to be honest, I'm not entirely sure what we ate instead!

MONDAY:
- Chicken Masala & Rice
- Naan bread
- Some sort of veggie

TUESDAY:
- Bistro Chicken
- Mashed potatoes
- Veggie

WEDNESDAY:
- Orange Chicken (great recipe - click through!)
- Rice
- Carrots (click & scroll to the bottom for a "recipe")

THURSDAY:
- Homemade pizza

FRIDAY:
- Hot dogs
- Stuff that goes with hot dogs...how's that for specifics?

SATURDAY:
- Eat out

SUNDAY:
- Chicken Tostadas (see Chicken Tostada Goop recipe)

Saturday: Leftovers/Ben whips something yummy up.

Sunday: Crock pot lasagna, green salad, and fresh bread.

Mango trick: Oxo mango pitter. You just peel it and slide the pitter from the top down, leaving you with the yummy fruit. It's oh so easy!

Wednesday: Meatball subs, carrot & celery sticks

Thursday: Calzones, fruit

Friday: Grilled burgers, chips, salad

Saturday: Quesasillas with chicken, spinach and cheese

Mango:

Here in australia we love fresh mangoes!!! cut off the cheeks( like parallel to the seed) then score criscross marks in it. You can keep it raw, or bbq them like this, and then invert the skin to get popped out squares of mango to eat or cut off.yummy

Hi there, I'm a day late, but I seem to do my planning on Mondays instead of Sundays, so maybe this will help for next week.

Monday: Fajitas (Feliz Cinco de Mayo!)
Tuesday:Korean BBQ
Wednesday:Mac & Cheese with Hot Dogs
Thursday:Crockpot Basil Chicken
Friday:Steak & Pepper Sandwiches
Saturday:Chicken Chowered (make with extra chicken from Thurs.)
Sunday: Orange Glazed Chicken

The best way to cut mango is as follows:
Cut off the cheeks (either side of the seed)
The take a knife and cut a checker board design into the mango cheek just deep enough NOT to pierce the outer skin. e.g cut three vertical line then three horizontal.
Now push the half inside out, so it makes little squares that you can just eat off without getting your hands dirty. This is also great for kids. it looks really pretty too.

After that just slice the skin on the seed and peel and eat flesh as you go. Also a great treat for babies older than 10 months.

your filipina chiming in w/ mango tips, seeing as it IS the national fruit of the philippines and i was mucho allergic to it for crazy amounts of years. but yes, the best way to slice is to cut both sides/cheeks off, leaving the oval pit in middle. hold the mango with the stem side down and then slice one side of the pit and then slice the other side. filipinos don't usually cube them, they cut thin slices, but sometimes i just get really lazy and scoop it out the way i eat a kiwi. (and i've heard/read the frozen mango cubes at trader joes are divine!) hope this helps! i'll try to post a vegetarian menu for you some time!

I agree with angie - the Oxo mango slicer is the best. I used to waste a lot of mango and always get frustrated until I got this thing. You can find it at Amazon.com; that's where I got mine.

I just found your blog and think it is great. I have been trying to organize something like this with my friends, but they were not interested. I love to cook, but hate the obligation of it. If I do not plan, then I am screwed and we don't eat anything but tomato soup that week - it is a sad truth.

I would like to see more recipes posted so I would know exactly what to make - especially the Chicken Masala! I need a good recipe!

Because I hate always having to decide - I have now opened one night up to my children for them to decide. So each child gets to choose a meal that week. That way they are excited and will actually eat and that is one less meal I have to plan. It works for us!

I hope I can participate even though I do not know you!

jen - please participate! by now I don't know very many of my sweet readers who post all the time...it's such a great community and anyone and everyone is MORE than welcome. I look forward to seeing your contributions!

as for recipes...I'll try to post more...but just so you know, I totally cheat and buy a jarred simmer sauce from Trader Joe's for chicken masala. ;)

good idea having your kids choose meals - that definitely helps with the planning and is a good way to get them involved!
