Week 82 Menu

Good morning! I am on FIRE today...it's only 9:14 AM and I am showered, I just pulled a pan of muffins out of the oven, there is a load of laundry in the washing machine, both girls are bathed and fed, and I've got my weekly menu done. Pigs must be flying in you-know-where. In fact, I think they're throwing snowballs, too.


MONDAY:
- Asian Spinach Salad
- BOBs

TUESDAY:
- Leftovers

WEDNESDAY:
- Penne w/vodka sauce, fresh parmesan & mozzarella
- Salad

THURSDAY:
- BBQ Chicken Pizza (recipe to come this week...you won't want to miss it!)

FRIDAY:
- Eat out

SATURDAY:
- Hamburgers
- Corn on the cob
- Fruit
- Baked beans

SUNDAY:
- Orange chicken
- Rice
- Spinach Salad with something yummy mixed in

wed- left overs
thurs- bbq steak, and whatever else my husband throws together
fri- sun- out of town!! Someone else is cookin!! :)

Last week was rough, so I've got to carry-overs from last week.

Monday:
-Ham & Mozzarella Panini's
-Potato Salad
-Salad

Tuesday:
-Broccoli & Cheddar Quiche
-Salad

Wednesday:
-Baked Potatoes
-Broccoli
-Salad

Thursday:
-Baked Chicken
-Parmesan Orzo
-Green Beans
-Salad

Friday:
-Homemade Pizza

Jane, here is the recipe it is from Kelly at tangledandtrue.com and is so easy and good! I did do the butter over the crumbs. My menu to come, still deciding.....

chicken poppyseed casserole
2 c. cooked chicken chunks
2 cans cream of chicken soup
1 c. sour cream
Ritz cracker crumbs
Poppyseeds

Mix sour cream and soup. Pour over chicken in casserole. Sprinkle with crumbs and poppyseeds. (Can pour melted butter over crumbs.) Bake at 350 degrees for 30-40 minutes.

It is so hot that I don't feel like cooking at all...but of course still have to eat! So here is a tenative plan:

Mon: White bean salad (didn't make this last week)
Tues: Asian Spinach Pasta Salad (love this too!) and Spinach Artichoke Dip (can't wait to try this)
Wed: Farfalle pasta with parmesan cream sauce
Thurs: Taco Salad
Fri: Mustard-Crusted Salmon, rice
Sat: eat out, b-day party for dessert
Sun: B-day dinner at friends house!

Also, I am going to try the chocolate zucc bread recipe at some point this week.

Well, it's good to have you back, Jane, and I am glad someone is on fire today! I most certainly am not, but I do know what I am cooking this week:

Sunday: Carne asada tacos with ceviche (from the local Mexican market...we communicate through sign language)

Monday: Spaghetti (my daughter's favorite, since it's her first day of Preschool! Yikes!) and salad

Tuesday: Chicken wrapped in bacon and dried beef with sour cream and cream of mushroom sauce, green beans and rice (Or we just might head to the local brewery for $2 beers and $2 taco night)

Wednesday: Steak, baked potatoes and corn

Thursday: Dinner at my mom's to see my Uncle from Indiana

Friday: Something on the BBQ, crab?

Saturday: Dinner out, hopefully without the kiddos

My menu:
Monday: Citrus Steak Salad

Tuesday: Chicken kababs with homemade hummus and naan.

Wednesday: Linguine with Shrimp and Lemon oil. Spinach salad too.

Thursday: Salt-crusted baked potatoes with all the fattening fixings.

Friday: Date night! Some mac and cheese for Son One. Maybe I will get Annie's Mac and Cheese. For some reason, I feel better about giving him mac and cheese if it is all natural (as if it makes that big of a difference!).

This is the link for Asian-Inspired Sloppy Joes. It's quick and easy, really good, kids like it. There's cabbage in it but even people who don't like cabbage like this. The recipe is at the end of the article. The length of the recipe makes it seem complicated but it really isn't.

Hey! No menu this week because I'm boycotting the grocery store.

Not really...just don't want to go!

Chicken Murphy is an Italian dish. You can make it with some sausage thrown in, too. Its chunks of floured chicken, onions, sauteed. The sauce is made from the "juice" in a jar of peperoncini and chicken broth. Throw in some of the peppers. Top with fried "diced" potatoes.

I can give you a better more specific recipe if you want!

Another easy, kid-friendly recipe is this particular Minestrone Soup recipe from Epicurious. My kids are not vegetable eaters but they like this, and it has 10 vegetables in it. Trader Joe's has a 1/4 pack of pancetta cut just to the right size. Serve it with French/Italian bread and some sort of salami or salty cheese.

Another fast and easy favorite of mine:

Easy Easy Spaghetti and Meatballs

2 cups purchased chunky tomato pasta sauce
(I use two large jars, which is more than 2 cups)
1/2 pound ground turkey
3/4 cup fresh breadcrumbs made from crustless Italian bread
2 3/4 tablespoons purchased pesto
1 egg white
1/4 teaspoon salt
8 ounces spaghetti

preparation

Spread 1 cup pasta sauce over bottom of heavy medium skillet.

Mix turkey, breadcrumbs, pesto, egg white and salt in medium bowl. Using moistened hands, form mixture into 8 meatballs. Place meatballs in single layer in sauce.

Spoon remaining sauce over. Bring to simmer. Cover; reduce heat to medium-low and simmer until meatballs are cooked through, stirring occasionally, about 20 minutes.

Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta; divide between bowls. Top with meatballs and sauce.
