hey jenny, can you post your recipe for slow cooker thai pork?
Slow Cooker Thai Pork with Peanut Sauce
1 2lb boneless pork loin, trimmed of fat & cut into 4 pieces
2 large red bell peppers seeded and cut into strips
2 T rice vinegar
2 cloves minced garlic
1 t. red pepper flakes
½ t. cardamom
¼ c. creamy peanut butter
½ c. chopped green onion, whites with a little green
¼ c. chopped dry roasted peanuts
2 limes cut into wedges
Coat slow cooker with nonstick spray, put top 7 ingredients into slow cooker. Cover and cook on low until the pork is fork tender (~4-6hrs, I can never remember)
Remove pork and coarsely chop. Add the pbutter and blend with the liquid to make sauce. Return pork to sauce, toss to coat evenly. Serve with jasmine rice, sprinkle with peanuts, onion and lime juice.
My husband doesn’t like peanut butter so I made his without and he loved it. I didn’t think the peanut butter was very strong, it just made it creamier.

Friday- Chipotle night
Monday: Pasta w/ sausage red sauce,
veggies and fruit
Tuesday: Taco Salad & fruit salad
Wednesday: Grilled marinated steak,
green salad, corn on the cob, watermelon
Thursday: Chinese chicken salad & wontons
Friday: (Breakfast for dinner) Crepes, berries, whip cream, veggie omelets
Saturday: eat out or leftovers
