Week 60 Menu & Happy St. Patrick's Day!

I usually go crazy on St. Patrick's Day...all of our food is green...green french fries, green salad, green fruit dip, green mashed potatoes, green rice krispie treats, green punch...you name it, I've turned it green...although, I've yet to figure out green corned beef!


This year, however, St. Patrick's Day is also graduation! Tomorrow, Nate will have the luck o' the Irish on his side as he defends his PhD Thesis, "Allele-specific Gene Regulation in Humans." What? I'm sure it will be fascinating and I am so excited for him! We're going to have a little dessert party tomorrow night with friends...where I'll pull out the green desserts, of course. Go Nate!

I can't even think about menus right now. Which is why this week's menu is LAME. I need to start packing since we're moving so soon...maybe I should pack my kitchen first so I CAN'T cook. Last night, Nate was saying that me having a food blog is like him (the scientist) having a painting blog. Ha ha ha ha...

MONDAY:
- Going out to a restaurant to celebrate!

TUESDAY:
- Lentil Soup (click on the link and scroll almost to the bottom...a delicious and easy recipe)

WEDNESDAY:
- Leftovers (which means, more soup.)

THURSDAY:
- Pizza

FRIDAY:
- Pasta

SATURDAY:
- Eat out

SUNDAY:
- Easter Sunday...I'll post the Easter dinner menu later this week!

PLEASE share menus the next few weeks. I need you to inspire each other since I'm a loser.

Sunday: We made our traditional (by traditional I mean we started a tradition this year!) St. Patrick's Day cabbage and bread pudding. So yummy.

Monday: I have a friend defending his dissertation tomorrow as well (weird!) and we're hosting his celebratory dinner here. Big menu of meatballs, noodles, cornbread and some appetizers.

Tuesday: Spinach and ravioli in olive oil with homemade cheese bread

Wednesday: Sloppy Joes

Thursday: Hubby on his own. I'm doing dinner with a friend

Friday: Chicken parm pizza

Saturday: Eat out or TBD

-Rotisserie Chicken
-Potato Salad w/ Sour Cream & Scallions
-Broccoli

Thursday
-Shrimp & Corn Tacos
-Black Beans w/ Lime

Monday:
garlic lime chicken, green mashed potatoes, green beans, something green for dessert

Tuesday:
southwestern casserole, salad

Wednesday(Hyde's 4th birthday! His dinner pick):
hot dogs, french fries, fruit, carrots, cake and ice cream!

Thursday:
left-overs

Friday:
pizza

Saturday:
bbq and easter egg hunt at my sisters

Sunday:
ham, potatoes, salad, rolls, etc....pretty typical Easter dinner

Monday: Chicken & wild rice soup, baguette, salad

Tuesday: Chicken soft tacos

Wednesday: Spaghetti, salad

Thursday: Beef & Broccoli, rice & vegetarian spring rolls from the freezer (never made it last week)

Friday: Calzones (I keep forgetting to thaw the dough in the freezer)

Saturday: leftovers

Sunday: Eating at my folks' for Easter dinner

We'll have the traditional Irish meal for you on Monday--

Mon--Corned Beef, potatoes, cabbage

Tuesday--salad with lots of stuff on it and french bread

Wednesday--Sweet Pea and Tuna Pasta

Thursday--rueben sandwiches, veges and dip

Friday--talent show dinner at school

Sat--eat out--our 5th anniversary :)

Sun--Easter dinner--not sure where or what our part of the food will be yet.

so my menu ALWAYS changes mid week or even the night of..sometimes to completely new dishes..or just something planned for the next week..cause i cant wait...so i'll just post my last weeks menu.

Sunday: First birthday party for our daughter
Ham, Lasagna, roasted veggies, salad, tons of appetizers and of course the flower pot shaped cake!

Monday
I think we're doing Tacos....I'm in the mood! With some yellow Spanish rice, yum!

Tuesday
Leftovers probably...Lasagna

Wednesday
Hmmm....not sure...I'm going to say a Chicken dish of some sort. I'm thinking Chicken with garlic sauce, egg noodles and roasted asparagus

Thursday
Our daughter's birthday AND we're celebrating St. Patty's with Corned Beef and Cabbage and mashed potatoes

Friday
Grilled cheese and tomato soup or possibly tuna noodle casserole. I've never made that before, anyone have a good recipe? I figure it's our best bet what with it being Good Friday and all!

Saturday
Homemade calzones

Sunday
EASTER!
Homemade ravioli and gravy, possibly a cheesecake to go along with it!

Sunday - food is everything to me and especially so on holidays, so I'm listing what we're having for breakfast too :)
-Breakfast: Lemon-Mascarpone filled Ebelskivers (German pancake that is round) with bacon
-Dinner: Opera's favorite slow cooked boneless ribs with peppers and onions. Served with mashed potatoes.

Hi, I am home this week so finally able to post a menu again!

Monday: we did corned beef & cabbage with little mini potatoes, yum

Tuesday: Broiled chicken that I'm marinating in orange juice & sage .. new attempt, will see what happens! Plus rice and steamed artichokes on side.

Wednesday: Pizza / out with the inlaws

Thursday: Reubens from the leftover corned beef

Friday: my family comes to visit! I'm thinking broiled fish of some sort.

Saturday: our 'Easter' traditional dinner, baked ham with gravy (yes gravy, not a glaze), mashed potatoes, baked beans, corn
