Healthy Eats: Wheat Bread with NO FIBER?!?!

I recently bought a loaf of "wheat french bread"... well, when I got home and read the label, there was NO FIBER in the bread. What the?!?!? My two whole grain cents... if you care... make sure the bread you buy says WHOLE wheat bread or whole grains - and read the labels carefully! I basically bought white bread with brown flecks in it, flecks with absolutely NO fiber.

I'm going to venture into the world of wheat bread baking. I'm looking for a recipe that is like the wheat bread they give you at Cheesecake Factory (DARK, kind of sweet, not too dense, not pumpernickel). If you have one, please share!

Are you talking about the kind of bread they have at Outback also? Albertsons carries it as sweet brown bread or Bavarian brown bread. I don't know how healthy it is though.

'How to be a domestic godess' by Nigella Lawson has a brown bread recipe in it that you might like. That cookbook is one of my favorites and all her recipes have turned out fantastic when I make them at home.

I just make plain whole wheat bread with wheat flour, gluten, oil and honey. Nothing fancy but oh so good.

Also, I heart cadbury eggs.

OK, try this one. I have to admit that I have not made this myself. But a lovely ward member made it for me after I had Lucas and it tastes so good that I ate nearly the whole loaf in a day.

Gwen Haglund's Whole Wheat Bread

5c hot water
2 pkg instant rise yeast
1T salt
1T cider vinegar
1/3 c molasses
2/3 c oil
2/3 c honey
5 c white whole wheat flour (check fiber content, i didn't)

Preheat oven to "warm" If water too hot, add yeast after oil, honey, etc mixed in.

Beat together, adding flour until it forms a moist ball. Knead well. Form loaves and place in 4 lg greased bread pans and allow to rise until double in warm oven. When doubled, turn up temp to 350 and bake 24 min. Turn out on racks immediately to cool.

Boy, I better get baking!

I'm not sure if you're still on the prowl for the sweet brown bread recipe, but I was searching for the same thing yesterday (when I came across your blog. :) ).

If you haven't already seen this recipe, I tried it last night, and it's fairly close. . .needs a little tweaking, but it's not bad!

that's great - I will definitely try it! what kind of tweaking are you going to do next time you make it?

well, I'm new to bread-making, so it's all experimental to me. :) But I'd like to try a different kind of whole wheat flour. I'd also like to research how to make it just a little more moist (it dried out within a day or so).

But the flavor - especially right out of the oven - was good. :)
